Founded in 1970, the Tuscan winery Siro Pacenti owns approximately 22 hectares of vineyards located at the foot of the Montalcino hill and planted exclusively with Sangiovese grapes, which gives its best in this area, creating wines of great character. The company has grown over the years, acquiring land and perfecting its production techniques thanks to the construction of a new, modern cellar in the early 2000s and a research and experimentation collaboration with the University of Bordeaux on the phenolic maturity of Sangiovese. The grapes are selected from vines between 15 and 25 years old, planted on mineral-rich hillside soils. After manual harvesting and vinification in stainless steel, the finished wine ages for a year in 225-liter French oak barrels before resting for three months in the bottle. In the glass, Siro Pacenti Rosso di Montalcino reveals an intense, brilliant ruby-red color. Its aromatic profile is broad and fragrant, with fruity notes of plum and cherry, followed by light hints of spice and tobacco. On the palate, it is soft and round, with a medium-full body and a well-integrated tannic backbone. It has a good, refreshing acidity and a long, smooth, and delicately spicy finish. It's a food-friendly wine: it pairs well with pasta with meat sauce, pizza Diavola, mushroom risotto, and even some beef or pork Asian recipes.
