Located in the heart of Ribera del Duero, Pago de los Capellanes was founded by Paco Rodero and his wife Conchi Villa. In the 70 hectares of vineyards that surround the cellar, they grow the local native Tempranillo or Tinto Fino grape, and small quantities of Cabernet Sauvignon and Merlot. Here the land has low productivity and the resulting wines are highly concentrated. The company's wines are refined in an underground cellar that is 10 meters deep. The Tempranillo grapes are selected from vineyards with an average age of 35 years, planted on clay-limestone, stony soils, poor in organic substance and with very low fertility, and located in the municipalities of Pedrosa de Duero, Anguix, and Roa. After vinification, the wine rests for 12 months in 300-liter French oak barrels, before bottling. Pago de los Capellanes Crianza is a young and balanced red wine. Its aromatic profile reveals notes of red fruits such as cherry and raspberry and some slightly spicy hints. On the palate, it is lively and has good freshness, it is fruity and clean. The finish is pleasant and persistent. It goes very well with aubergine parmigiana and grilled pork filet.
