Located in Chavignol, in the Sancerre wine-producing district of the Loire Valley, Domaine Hubert-Brochard boasts over 120 years of history, having been founded in 1900 by Aimée and Hubert Brochard. The estate, which today covers over 90 hectares of vineyards spread across the Sancerre and Pouilly-Fumé appellations, has been part of the Bollinger Group since 2022. The Sauvignon Blanc grapes come from vineyards located on three steep slopes in Chavignol, on varied soils combining caillotte, griotte, and marl, where the work in the vineyard is complex and laborious. After manual harvesting, the vinification takes place in a mix of barrels, amphorae, and stainless steel vats, where the finished wine ages for 6 months. Sancerre Les Trois Coteaux Terre de Caillotes is an elegant and expressive wine that reveals a brilliant straw yellow color in the glass. Its aromatic profile is intense and lively with notes of pear, apple, and citrus, hints of coriander and white pepper, and an undertone of slate. On the palate, it displays a surprising minerality. It's balanced, crisp, round, and juicy, with a delicious fruity concentration and refreshing acidity. Try it with white fish in lemon sauce or sushi.
