Located in the Loire Valley, in the village of Chavignol, the Hubert Brochard winery was founded by Aimée and Hubert Brochard in 1900 and today owns over 90 hectares of vineyards planted with Sauvignon Blanc and Pinot Noir, spread across the Sancerre and Pouilly-Fumé appellations. In 2022, the estate was acquired by the Bollinger Group. The Sauvignon Blanc grapes are sourced from selected plots on the hillsides of the Sancerre appellation. Here, the vines are rooted in a mix of limestone (caillotte), flint (silex), and clay-limestone (terres blanches) soils, benefiting from a cool continental climate that helps preserve the lively acidity of Sauvignon Blanc. After separate vinification by batch, the wines age separately for four months on the lees in a combination of stainless steel vats, barrels, amphorae, or concrete tanks. In the glass, the wine reveals a brilliant straw-yellow color and an expressive, fresh aromatic profile. On the nose, it releases notes of citrus, green apple, wildflowers, and mineral hints. On the palate, it is pure, savory, and lively with a pronounced, refreshing acidity. It is juicy and elegant, mineral and thirst-quenching. The finish is long and delicately savory. For the perfect food pairing, try it with goat cheese, sushi, fish carpaccio, or seafood.
