Attilio Ghisolfi is a winery located in Piedmont with a long family tradition spanning four generations and a history that has evolved over time. While for years the company operated a mixed economy, in 1988, with the arrival of Gianmarco Ghisolfi, it focused its operations on the production and bottling of its own wine, achieving great success and popularity. The Nebbiolo grapes come from several vineyards averaging 16 years old, located between Monforte and Monteu Roero, at 300 to 400 meters above sea level on calcareous marl soils. The name "Sbardajà" in Piedmontese dialect means "scattered," indicating the various origins. After harvest, fermentation occurs spontaneously with indigenous yeasts, and the finished wine ages for one year in stainless steel and another four months in the bottle. In the glass, the wine reveals a brilliant ruby ​​color and a broad, intense aromatic profile with notes of cherry, pomegranate, and plum, along with floral and licorice hints. On the palate, it is rich, smooth, and round, with a well-defined tannic backbone and a long, warm, and savory finish. It is an elegant wine that pairs well with pasta with meat sauces, tagliolini with truffles, and grilled meats.
